For the first time ever, Meatopia comes to San Antonio for a Texas-sized two-day weekend—and bison will be there!
Two world-class chefs will be showcasing two special cuts of bison at this festival for carnivores in the culinary heart of San Antonio.
Chef John Tesar, of Dallas’ Spoon Bar & Kitchen, will cook bison ribeye prepared with a dry rub. Chef Tesar is a five-star James Beard nominee. Spoon has just been chosen as one of 2013’s ‘Best New Restaurants’ by Esquire Magazine.
Chef Jeff Foresman, Executive Chef of Zocca Cuisine D’Italia, will be creating bison carpaccio and featuring it on his famous flatbreads. Zocca, set on San Antonio’s famed Riverwalk, has been voted the #1 Best Italian Restaurant in San Antonio by TripAdvisor.
In addition to the bison cooking stations, Meatopia will encompass dozens of events in multiple venues, each with their own character and energy.
Meatopia, held annually in New York City for the last nine years, is a world-class culinary event founded and hosted by TIME magazine food columnist and James Beard Award-winning food writer Josh Ozersky.
It has been acclaimed as "a meat-lover's paradise" (New York magazine), "spectacular" (Esquire), a "bacchanal of pork, beef, lamb, chicken, duck, turkey and quail" (New York Times), and "a glorious city of meat" (The Huffington Post).
